A friend let me borrow Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World for a dinner party I was having. I loved it so much I needed my own copy. Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World is great and my kids like the recipes. I like that you can cook foods by their country of origins. I have lots of themed dinner parties so this works well for me, and an added bonus is a little geography lesson for my kids!



Great Variety
This is my second favorite vegetarian cookbook, after Moosewood Restaurant Cooks at Home. I have several of Madhur Jaffrey's cookbooks and I always find that preparation instructions are easy to follow, the recipes work as described, and that her suggestions for substitutions or variations are right on the mark. Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World is particularly enjoyable to browse, as the recipes are broken into sections (vegetables, grains) then sorted based on the dominant ingredient (cauliflower, pasta). If you buy Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World, you will find that you can cut the amount of oil recommended for most recipes to 2/3 or 1/2 of the suggested amount and things will still come out fine. Perhaps my absolute favorite cookbook
I belong to a CSA, so I get a weekly box of vegetables for 20 weeks of the year. Whenever I want to try something new or add zing to a vegetable, one of the first places I turn is Madhur Jaffrey's World Vegetarian. I've found dozens of keepers in this cookbook - dishes I've never really encountered elsewhere, but that intrigue my tastebuds and stretch my horizons. For example, she has a "pumpkin pie" recipe from Greece (p 293) - think spanakopita (spinach pie), not Thanksgiving custard concoctions - and it never ceases to amaze people I make it for. I use 2 to 4 recipes per week from this cookbook during the height of CSA season. I love it so much, I joke that I should start a fan club. :^)

Best cookbook out there!
Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World is great! I am not a vegetarian, but love to eat most of my meals consisting of legumes and veggies. Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World really fits the bill! I love how economical most of these recipes are. I took a trip to my local farmers market and bought several pounds of the beans, all of the recommended spices, and veggies all for under 75 dollars. I have a pantry full of items that I can use with these recipes.
Not only is the book practical and economical, but is full of information and provides a great foundation for how to cook, not just how to follow a recipe. It is like an encyclopedia in that you can look up the ingredient and find all you need to know about it and great recipes to follow it. Great find! I don't think there is another book out ... Great World Cuisine, even if not vegetarian
I found Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes from Around the World by accident many years ago. I was the head chef for a small organic cafe and we had a large (I won't mention the name) retail bookstore next door I turned to when I had the occasional mental block on what to come up with for a daily special. I kept returning to this volume over and over, until I bought it. For those that know me and my professional culinary career, know that I got serious about cooking for others when I was living in Thailand and landed a job at a small guest house and cooking for monks at a nearby forest monastery. I was able to parley this experience and use it to work and travel cheaply throughout Asia and Latin America.
