In a nutshell Your New Restaurant is very good for someone like me that knows nothing about the subject. It covers alot of ground without getting into to much detail (very easy reading). Some chapters can be skipped if you have any common sense and there's a bit to much filler. It did open my eyes with regards to the task at hand. . . there's alot to this business and if your not on top of everthing your not going to be successful.
This book is an absolute necessity.
I am in the process of opening a restaurant and was loaned Your New Restaurant by the local Small Business Administration office. I have found it very helpful in how to handle every facet of the operation, from how to hire,train and motivate employees to how to handle all of the financial aspects and everything in between. I have to give this copy back, so I turned to Amazon to purchase my own copy. Another book that I have found very useful (also purchased from Amazon) is Restaurant Management: Customers, Operations and Employees by Robert Christie Mill.
