Product DescriptionThe Yellow Eye Stueben Bean (Phaseolus Vulgaris) is related to the Kidney Bean. It is about 1/2 inch in length, oval-shaped and ivory-colored with a mustard-colored splotch radiating from the inner seam. The very center of the inner seam has a white center encircled by a light brown ring. Yellow Eye Stueben beans have a mild flavor, firm texture and the colors are retained after cooking. The Stueben Yellow Eyed beans have more of a mustard color than the Maine Yellow Eye beans. It is also referred as a Dot-Eye bean, Molasses-Face bean and Yellow-Eyed China bean. Yellow Eyes are commonly grown in Michigan, Idaho, and California.
