Not useable for its intended purpose
I bought this skillet from a Williams Sonoma retail store on 10/10/08 and returned it on 10/11. They are a very nice store to deal with on products and accepted the return without problem. I subsequently found that there are other write-ups on this skillet on their site where it is not rated highly. I found the criticisms are just. There is a hot spot in the middle. The cooking is not even. A real test for a stainless steel skillet is cooking eggs and pancakes because the temperature must be kept at about 350 so the food sears quickly. The food basically tells you when it is ready to be turned when it releases easily with a spatula. However, even with a lot of grease (from the bacon), food sticks in this skillet. WOW, WHAT A PAN!
I have had many electric skillets over the years that needed replacement every 3 - 4 years. We use an electric skillet for everything from pancakes to pot roast to stuffed peppers. When I saw this pan, I thought "Why not? I have already spent hundreds of dollars on the cheaper ones." Well, this is the sturdiest, best built, biggest skillet ever. No sticking, burning, easy to clean. The only problem is the handle on the lid gets hot so use a hot pad to remove it.
